Tasting Notes: Red cherry, rhubarb, slight cracked black pepper & hints of cola.

In a Nutshell: Full destem. 100% Whole berry fermentation to promote carbonic flavors. Pumpovers instead of punch downs to minimize tannin extraction. *This wine was fermented in a C02 rich atmosphere to produce what is called a "partial carbonic" fermentation - the goal being to promote fresh, bright, fruit pop (carbonic tendencies) on the nose & the palate. Aged in 500L neutral French oak puncheon barrels for 10 months.
